Handle tip outs cleanly

The problem

Tip distribution causes arguments and record-keeping problems.

Steps

1. Write the tip out percentages for each role and post them
2. Calculate tip outs from the POS report, not memory
3. Have the shift lead sign off on the sheet
4. Pay out in the same way every shift
5. Keep the sheets for your payroll records
